INGREDIENTS:
- 1.5 kg of goat
- 6 cloves of garlic
- 1 Tbsp (soup) sweet pepper
- 1 onion cut into slices
- 3 bay leaves
- Rosemary
- 500 ml of white wine
- 1 tbsp black pepper
- Salt q.s.
- 50 ml of whiskey
- Lemon slices to taste
- 1kg of small potatoes (washed and cut in half)
- 2 Tbsp lard
- Olive oil q.s.
PREPARATION:
Place the leg of goat on a tray, add the sliced or crushed garlic cloves, sweet pepper, onion cut into half moons, bay leaves, rosemary, chilli powder, white wine, black pepper, salt and whiskey. Mix everything very well. Add lemon slices and cover with cling film and refrigerate.
Leave to marinate for 24 hours, turning the meat every 6 hours.
Preheat the oven to 200º C.
On a baking tray, place the onion cut into half moons. Add the leg of goat on top with the bay leaves and, around the meat, the small potatoes cut in half.
Place spoonfuls of lard over the meat and drizzle with olive oil and marinade.
Bake at 200°C for 2 hours, until the meat starts to fall off the bone.
Serve, if you prefer, with white rice or sautéed vegetables. It's ready to serve!
