INGREDIENTS:
- 240 g of cooked red beans
- 200 g of rice
- 2 Tbsp olive oil
- 1 chopped onion
- 3 cloves of garlic, chopped
- 225 ml vegetable broth
- ½ chopped red pepper
- ½ chopped yellow pepper
- 150 g canned corn
- 175 ml tomato pulp
- 1 tsp sweet pepper
- 1 tsp pepper (tea)
- 1 tsp of salt
- 100 g of green onion
- 40 g chopped parsley
- Juice of 1 lemon
PREPARATION:
Heat a pan with olive oil, onion and garlic and let it sauté. Add the chopped red and yellow pepper, corn and tomato pulp. Involve everything.
Add the cooked red beans, the washed and drained basmati rice and mix everything together. Add the vegetable broth and season with paprika, salt and pepper. Add the green onion, mix everything and bring to a boil. When it boils, cover and let it cook over low heat for about 15 minutes.
