INGREDIENTS:
- 1 puff pastry
- 500 g cooked and drained pumpkin
- 300 g of grated coconut
- 200 g of sugar
- 4 eggs
- juice of 1 orange
- grated coconut for sprinkling
PREPARATION:
Bring a pan to the boil with water, add the eggs, and let it cook for about 10 minutes.
In another pan with water, add the skin-on potatoes, season with salt, and cook for 20 to 30 minutes.
In another pan with water, add the soaked cod fillets, cook for around 8 minutes, turn off and let rest for 30 minutes.
Preheat the oven to 180ºC.
The eggs are already boiled and peeled, cut into slices. Break the cod into pieces. The potatoes are already skinless — I'm going to cut them in half and into slices.
Place alternating layers of potatoes, cod, pepper strips, sliced garlic and a few slices of eggs on a heatproof tray. Layer until you run out of ingredients.
Drizzle with olive oil. Beat the remaining eggs and season with pepper and salt. Pour them over the last layer.

Place the tray in the oven at 180ºC, until golden. When it is golden brown, turn off the oven and decorate with chopped parsley and olives. It's ready to serve
