INGREDIENTS:

  • small mackerel q.s.
  • Small potatoes q.b
  • Olive oil and salt

For the onion:

  • 1 large onion cut into half-moon slices
  • 3 sliced garlic cloves
  • 2 bay leaves

PREPARATION:

Preheat the oven to 200ºC. Place the washed baby potatoes on a baking tray.

Season generously with coarse salt and bake at 200ºC for approximately 30 minutes, or until they are soft on the inside and crispy on the outside.

Season the well-washed and gutted mackerel with salt to taste. Arrange them on a tray and drizzle with olive oil.

Bake at 200ºC for around 15 to 20 minutes, or until cooked and golden.

In a frying pan, heat the oil, onion and bay leaves. Stir and let it heat up well. When the onion starts to soften, add the sliced garlic and let it heat up slightly. Remove from heat and set aside.

Remove the mackerel and potatoes from the oven. Smash the potatoes lightly with a punch and spread them around the dish.

In the center place the mackerel and cover the potatoes with the stew. Drizzle the mackerel and potatoes with olive oil.
