Preparation Time: 20 mins + marinade  |  Cooking Time: 25 mins  |  To: 4-6 people

INGREDIENTS:

  • 240 g of cooked red beans
  • 1 cup of carolino rice
  • 1 chopped onion
  • 3 cloves of garlic, chopped
  • 1 carrot
  • 1 tsp sweet pepper
  • 1 tsp pepper (tea)
  • Salt and olive oil to taste

For the fish fillets:

  • 5 hake fillets (400 g)
  • Juice of 1 lemon
  • 2 eggs
  • Oil to taste
  • Salt, pepper and flour to taste

PREPARATION:

Defrost the fillets and season with salt, pepper and lemon juice. Leave to marinate for at least 60 minutes.

In a pan, heat a drizzle of olive oil. Add the chopped onion and chopped garlic. Wrap everything up very well. When the onion is translucent, add the carrot in half moons.

After everything is well sautéed, add the washed rice, mix very well and let it fry for 2 minutes.

Season with sweet pepper, salt and pepper. Wrap everything up very well.

Add 2 measures of hot water to the amount of rice, add the beans. Mix everything together and let it cook for about 12 minutes.

While the rice is cooking, we will fry the fish fillets, coat the fillet in beaten egg, then in flour and finally in beaten egg.

Fry on both sides until golden. Remove and place on absorbent paper. Repeat the process with all fillets.

Serve on a pretty plate accompanied by golden hake fillets.
