INGREDIENTS:

  • 350 g of fried straw potatoes
  • 350 g cooked and shredded chicken
  • olive oil (q.b.)
  • 1 bay leaf
  • pepper (q.b.)
  • 4 eggs
  • 1 onion
  • 4 cloves of garlic
  • salt (q.b.)
  • parsley (q.b.)
  • olives (q.b.)

PREPARATION:

In a pan with water and seasoned with salt, cook the chicken. Once cooked, remove from the heat and shred the chicken.

In a frying pan with hot oil, sauté the sliced onion. Add the bay leaf, chopped garlic and shredded chicken. Let it cook for a few minutes.

Add the straw potatoes, chopped parsley, sliced olives and mix everything. Let the potatoes soften a little.

In a bowl, lightly beat the eggs with a fork.

Add the eggs to the chicken, mix everything and let the eggs cook. Season with salt and pepper. Involve everything.

Place on a platter and sprinkle with chopped parsley. Serve hot and enjoy!
