INGREDIENTS:

  • 1 chicken
  • 150 g diced bacon
  • 1 onion
  • 1 red pepper
  • 3 cloves of garlic
  • 1 can of peeled tomatoes in pieces
  • 2 dl of white wine
  • 1 tbsp sweet pepper
  • 1 bay leaf
  • 350 g chestnuts
  • Olive oil, salt and chilli to taste

PREPARATION:

Cut the chicken into pieces, place them in a bowl and season them with the finely chopped garlic cloves, paprika, salt, chilli and white wine. Wrap and let marinate for 20 minutes.

Heat a pan with heated olive oil, add the drained chicken, bay leaf, chopped onion, chestnuts and bacon and let it cook until the chicken is golden.

Transfer the previous preparation to a bowl, add the tomato and meat marinade and bake in the oven, preheated to 180ºC, for 40 minutes, stirring occasionally. If necessary, add a little water. At the end, adjust the seasoning, remove from the oven and serve with white rice.
