INGREDIENTS:

  • 6 sheets of filo dough
  • 1 sausage
  • 1 onion
  • 2 cloves of garlic
  • 1/2 red pepper
  • Chopped parsley to taste
  • 80g melted butter for brushing
  • Olive oil, pepper and paprika to taste

PREPARATION:

We start with the alheira: cut the thread, make a cut along it and remove the skin. Mash the filling with a fork until you obtain a uniform paste and set aside.

In a frying pan, heat a drizzle of olive oil and add the chopped onion. Let it brown slightly, then add the chopped garlic and mix well. Next, add the chopped red pepper and sauté until soft and fragrant.

Season with pepper and paprika to taste, and mix everything well. Now add the alheira and mix until everything is incorporated. Turn off the heat and finish with chopped fresh parsley, this touch makes all the difference!

Preheat the oven to 190ºC.

On a clean surface, brush a sheet of filo pastry with melted butter. Place another sheet on top, brush again, and repeat with another sheet, in total three brushed sheets. Do the same with the remaining three sheets.

Cut each set of sheets into 9 equal parts. Distribute the filling over each piece and roll it up, folding the ends inwards.

Place the pastries on a tray lined with baking paper and bake at 190ºC for 15 minutes, until golden and crispy. You can serve them hot or cold, they are delicious both ways!
