INGREDIENTS:

  • 1 package of filo dough
  • 70 g of butter
  • Powdered sugar and cinnamon for sprinkling

For the filling:

  • 400 g of cooked white beans
  • 100 g of sugar
  • 1 teaspoon of cinnamon powder
  • 3 egg yolks

PREPARATION:

Cook and drain the beans well. Reduce the beans to puree with the help of a hand blender.

Prepare the filling, add the bean puree, sugar and egg yolks to a saucepan. Mix everything and heat, stirring constantly with a whisk, until it boils and thickens. Turn off and let cool.

Preheat the oven to 200ºC.

Work the phyllo dough, unroll the phyllo sheets. Place a sheet of dough on the table, brush with melted butter. Place another one on top and brush it again with butter, overlapping the last one, brushing it too. Cut the dough into nine equal rectangles. Place a tablespoon of filling at one end of the dough and roll it up. Repeat the same for the remaining dough. Place on a tray lined with parchment paper.

Place the pastries in the preheated oven at 200ºC for around 15 to 20 minutes. Check that the dough does not burn. Remove from the oven and place the pastries on a platter. Sprinkle with sugar and powdered cinnamon.
