INGREDIENTS:
For the dough:
- Salt
- 100 g of flour
- 1.5 C. (soup) of milk
- Oil
- Parsley
- Pepper
- 2 cloves of garlic
- 2 eggs
- 1 cod fillet
- 1 onion
- 1/2 c. (soup) white wine
- nutmeg
- Black olives
PREPARATION:
In a pan of boiling water, cook the cod for 5 minutes. Remove and let cool, reserving the cooking water. Clean it of skin and bones and shred it into chips.
In a bowl, mix the flour, milk, chopped parsley, eggs and wine and stir until smooth.
Add the finely chopped onion and garlic and a little of the cod cooking water and stir.
Mix well and let it rest for 2 hours.
Heat a frying pan with olive oil and fry the pataniscas, pouring in small portions of dough using a ladle.
Let them fry until they are slightly golden and remove them to a plate lined with absorbent paper.
Place on a platter and decorate with olives and parsley.
