Preparation Time: 20 mins + marinating time | Cooking Time: 80 mins | To: 3-4 people
INGREDIENTS:
For the turkey:
- 2.2 kg of turkey legs
- 6 cloves of garlic
- 1 bay leaf
- 2 tablespoons of oregano
- 2 tablespoons of pepper paste
- 1 teaspoon sweet pepper
- 2 tablespoons of pepper
- 250 ml of white wine
- juice of an orange
- salt to taste
- 1 orange in slices
For the potatoes:
- 1kg of small potatoes
- 150 ml of olive oil
- 1/2 red pepper
- 1/2 onion
- Salt
- Herbs de Provence
PREPARATION:
On a baking tray, place the turkey leg and season with the chopped garlic cloves, oregano, pepper paste, sweet pepper, pepper and bay leaf. Drizzle with orange juice and white wine. Season with salt and mix everything. Add the orange slices. Cover and place in the fridge to marinate overnight.
Turn on the oven at 180ºC.
Drizzle with olive oil and bake at 180º C for 80 minutes. From time to time, baste the turkey leg with the sauce.
On a platter, place the small potatoes, the red pepper in strips and the onion in half-moons. Season with herbs de Provence (rosemary, serpão, marjoram and oregano), salt and sweet pepper. Drizzle with olive oil and coat everything. Bake at 180ºC for around 50 minutes.
Can serve with white rice.
