INGREDIENTS:

For the dough:

  • 2 bowls of water
  • 2 bowls of flour
  • 2 Tbsp butter or margarine
  • 2 lemon peel
  • 1 pinch of salt q.s.

For the filling:

  • 3 cans of tuna (drained weight 252 g)
  • 375 ml of milk
  • 6 tbsp unleavened flour
  • 1 sprig of chopped parsley
  • 3 Tbsp finely chopped onion
  • 3 Tbsp tomato pulp
  • Oil
  • Salt and pepper q.s.

For the filling:

  • 1 egg
  • Breadcrumbs

PREPARATION:

Prepare the pasta: in a pan with water, a pinch of salt, add the lemon peels and butter, bring to the boil and bring to a boil. remove the lemon peels, add the flour in the form of “rain”, always mixing very well until you obtain a homogeneous ball. Place the dough on the table and knead. Divide the dough into 5 parts and let it cool.

In a bowl, mix the flour with the milk slowly, stirring constantly and set aside.

For the filling: in a pan with olive oil, add the chopped onion and garlic cloves, flaked tuna, tomato pulp and flour dissolved in the milk. Mix everything until it thickens. Season with salt and pepper, mix everything and turn off the heat. Add the chopped parsley and set aside.

On a table sprinkled with flour, roll out the dough with a rolling pin until it is thin, place a little of the filling on top, fold the dough and cut into patties. Repeat the operation until you run out of ingredients, then coat in beaten egg and breadcrumbs.

Place the patties to fry in hot oil until they are golden brown. Place them draining on paper towel. Serve when cool and enjoy!
