INGREDIENTS:

For the dough:

  • 500 g of wheat flour
  • 90 g of butter
  • 500 ml of water
  • salt

For the filling:

  • 400 g of peeled shrimp
  • 1 onion
  • 2 cloves of garlic
  • 2 Tbsp coriander
  • 2 tbsp wheat flour
  • 1 Tbsp (soup) tomato pulp
  • 1 Tbsp butter
  • 1/2 Tbsp sweet pepper
  • 1/2 red pepper
  • 50 ml of white wine
  • 1/2 tbsp pepper
  • salt q.s.
  • 1 glass of water

For panning:

  • 2 eggs
  • Breadcrumbs

PREPARATION:

For the filling: in a pan with butter, sauté the onion, chopped garlic cloves and salt, stirring occasionally, until golden brown.
Add the red pepper strips and chopped coriander, and let it sauté for 2 minutes.
Add the tomato pulp, white wine and wheat flour, mixing everything well. Water little by little with water. Turn off the heat and grind everything.
Bring back to the heat and add the peeled shrimp. Mix it up.
Season with sweet pepper and black pepper, and let it cook until it thickens. Book.

For the dough: in a pan with water, add the lemon peel, butter and a pinch of salt. Bring to a boil and let it boil. Add the flour in a ''rain'' shape, always mixing very well until you get a homogeneous ball.

On a table sprinkled with flour, knead the dough and roll it out with a rolling pin until it is thin. Add a little of the filling, fold the dough and cut into patties. Repeat the operation until you run out of ingredients. Then coat in beaten eggs and breadcrumbs.

Fry the patties in hot oil until golden. Place them to drain on kitchen paper. Serve when cool and enjoy!
