INGREDIENTS:

  • 250 g black-eyed peas
  • 2 cans of canned tuna
  • 1 chopped onion
  • Parsley q.s.
  • 2 eggs
  • Oil
  • Chopped black olives

PREPARATION:

Soak the beans overnight. The next day, bring water to a boil in a container and season with salt. When the water starts to boil, add the beans and cook. When it is cooked, drain the water and let it cool. Suggestion: you can use canned black-eyed peas.

Drain the cans of tuna and break the tuna into flakes. Boil the eggs.

Finely chop the onion and parsley.

On a platter, add the black-eyed peas, onion and tuna, mix everything together.

Add the olives and chopped parsley, mix everything slowly. Add the sliced eggs and mix everything again.

Drizzle with olive oil and season with pepper. Mix everything until well combined.
