INGREDIENTS:

  • 1 cup of rice
  • 4 salmon fillets
  • 1 onion
  • 3 cloves of garlic
  • Salt
  • Oil
  • 1 Tbsp (soup) tomato pulp
  • 4 tbsp lemon juice

PREPARATION:

Season the salmon with salt and lemon juice. Leave to marinate while you prepare the rice.

In a pan with heated olive oil, sauté a chopped onion and garlic clove. Add the tomato pulp and water. Season with salt and bring to a boil. Add the rice, cover and cook over low heat for 10 minutes. 

Grease a grill with olive oil. Place the sliced garlic cloves and place the salmon slices on top. Let it grill until golden.

On a platter, place the salmon steaks and decorate with tomato segments. Serve accompanied with tomato rice.
