INGREDIENTS:

  • 1 branch of broccoli
  • 250 g of chickpeas
  • 200 g of spinach
  • ½ sweet potato
  • 1 carrot
  • 1 courgette
  • ½ onion
  • 2 cloves of garlic
  • 4 eggs
  • 1 L of water
  • Salt to taste

PREPARATION:

Separate the broccoli into florets and wash them; Peel the carrot, courgette, onion, garlic and sweet potato and cut them into pieces.

Place the vegetables in a pan, add the water, season with salt, bring to the boil and let it cook. Add the spinach and cook for another 5 minutes.

When everything is cooked, blend with a hand blender until you get a cream.

Add the cooked chickpeas and adjust the seasoning.

Bring another pan with water, seasoned with salt, to the boil and bring to a boil.

Swirl the water with a spoon and add an egg. Let it cook for about 4 minutes.

Carefully remove and add to the soup. Repeat with the remaining eggs and serve hot.
