INGREDIENTS:
- 180 g of sugar
- 3 eggs
- 1 yolk
- Butter
- Honey
- 1 lemon zest
- 280 g of flour
- 1 Tbsp vanilla flavoring
- 5 ripe pears
- 250 ml of milk
PREPARATION:
For the dough: combine 100 g of sugar with butter, the egg, the yolk and 260 g of flour, knead well. Add the lemon zest and knead a little more, until everything is well mixed. Wrap the dough in cling film and let it rest in the fridge for 15 minutes.
For the filling: mix the sugar with the flour, eggs and milk. Cook over low heat until it thickens, stirring constantly to avoid burning. Add the vanilla aroma, remove from the heat and let it cool, stirring occasionally.
Preheat the oven to 180ºC.
Roll out the dough on a table sprinkled with flour until it is thin. Line a rectangular tart pan with baking paper and pour in the dough and trim off the excess. Pour in the cream and cover with thin pear slices.
Bake at 180ºC for around 35 minutes. Leave to cool. Drizzle the tart with honey and serve.
