Preparation

  1. Wash the figs well and cut them into quarters.

  2. In a saucepan, place the sugar, figs, water and lemon juice.

  3. Bring to the boil, stirring occasionally, until the figs are soft.

  4. Blend the figs a little with a hand blender without completely reducing them to puree.

  5. Bring to a boil over low heat, stirring constantly until it reaches boiling point.

  6. Let it cool and store the candy in sterilized, dry jars.
