Preparation

  1. Place the olive oil and chopped garlic in a frying pan and sauté over medium-low heat for about 3 to 4 minutes, stirring occasionally.

  2. Add the slices of bread, drizzle with olive oil.

  3. Place chopped garlic and coriander on top. Season with pepper and fry on both sides over medium heat until golden.

  4. Bring a pan with water and a few drops of vinegar to a high heat. When the water starts to boil, reduce heat to medium-low, add the eggs one by one and let them poach for five minutes. When the eggs are poached, remove them with a slotted spoon.

  5. Place the poached eggs on top of the bread, season with pepper and serve.
