Preparation

In a pan add the milk, cinnamon stick and lemon peel, bring to a boil.

In a bowl, combine the eggs and sugar. Beat everything. Add the flour, beat everything and set aside.

Remove the lemon peel and cinnamon stick. Add a little milk to the mixture and mix everything together. Add the mixture to the milk in a stream, stirring constantly. Bring the pan to the heat, stirring constantly until it thickens and let it cool.

Turn on the oven at 220ºC and place the clay bowls to heat for 5 minutes.

Beat the egg whites until stiff and season with salt. Add the egg whites to the previous preparation little by little and mix everything together. Pour the mixture into the bowls and sprinkle with plenty of ground cinnamon.

Place in a preheated oven at 220°C for about 20 minutes or until golden.

Serve the sericaias while still warm.
