INGREDIENTS:
- 6 eggs
- 200g sugar
- 1 teaspoon vanilla essence
- 120g flour
- 1 teaspoon bicarbonate
For the Filling and Covering:
- 500g fresh strawberries
- 400ml very cold cream
- 100g powdered sugar
- Whole strawberries to decorate
PREPARATION:
Bring a pan to the boil with water and sugar and bring to a boil. Add the peeled and diced apples, cinnamon and cashew pieces. Mix everything together and let it cook for about 5 minutes.
First, preheat the oven to 180ºC.
In a bowl, combine the eggs and sugar. Beat everything very well until it forms a fluffy, whitish cream.
Now add the vanilla essence and beat some more.
Add the sifted flour and baking soda. Engage gently with smooth movements.
Pour the dough into the pan already lined with parchment paper.
Bake at 180ºC for 20 minutes.
After the time, check if it is cooked with a toothpick and remove it.
On the counter, remove from the pan and place parchment paper on top, turn it upside down and carefully remove the parchment paper. Wrap the pie and let it cool for 10 minutes.
Cut the strawberries into pieces after washing them very well, and place them in a bowl and set aside.
Meanwhile, make the whipped cream. Beat the cream until it becomes fluffy and voluminous. While beating, gradually add the powdered sugar. Beat until the whipped cream is consistent.
Unroll the pie and fill it with whipped cream, using a spatula and smooth it out. Add the strawberries broken into pieces. Roll up and cover the pie with whipped cream using a spatula and smooth it out. Decorate to taste with whole strawberries. Store in the refrigerator until ready to serve.
